Mixing

Mixers (Planetary and Spiral): Used first to mix ingredients such as flour, sugar, eggs, and butter to create dough or batter. Different attachments can be used for different mixing needs.

Dough Sheeters

Dough Sheeters: Roll out dough to desired thickness, especially useful for pastries.

Dough Dividers and Rounders

Dough Dividers and Rounders: Divide the mixed dough into consistent, uniform portions and round them into balls for bread, buns, or other products.

Proofing

Proofing Machine: Once the dough is shaped, it’s placed in a proofing cabinet where controlled temperature and humidity allow the dough to rise before baking.

Baking

Ovens (Convection, Deck, Rack Ovens): The proofed dough is then baked. The type of oven used depends on the specific product being made (e.g., deck ovens are preferred for artisanal breads, convection ovens for pastries and cookies).

Cooling

After baking, items are removed from the oven and placed on cooling racks to allow air circulation and prevent condensation which could make the baked goods soggy.

Decoration and Finishing
